CHOCOLATE SOUFFLE CAKE Note: This mix calls for cake flour. Cake wheat is a fine-textured wheat wheat that has an above starch content creating it more suitable for a souffle cake. Whether you do not have cake flour, DO NOT substitute an equal no. Whether you use all-purpose flour, use only two or 5 cup!. Nonstick baking spray1 or 3 cup granulated sugar1 or 3 cup packed dark beige sugar3 or 5 cup water1 tbsp instant espresso 3 or 4 cup unsweetened cocoa powder1 or 5 tsp salt2-oz semisweet chocolate, chopped2-oz unsweetened chocolate, chopped2 tbsp coffee-flavored liqueur3 large egg yolks1 or 4 cup sifted cake flour6 large egg whites, space temperature1 or 5 tsp cream of tartar1 or 4 cup granulated sugar1 tbsp powdered sugar1 or 5 cup new raspberries for garnishchocolate curls for garnish.



Preheat stove to 300 degrees. Coat the bottom of a 9-inch springform pot with the baking spray; set aside. In a large saucepan combine the two or 3 cup granulated sugar, beige sugar, water, and espresso; stir well to combine and bring to a boil over moderate heat. Creating use of a wire whisk, sum the cocoa, salt, and chopped chocolates, stirring until melted and smooth. Stir within the coffee-flavored liqueur and the egg yolks, repeatedly creating use of wire whisk to blend eggs yolks in well.
